Angel Hair Pasta with Roasted Garlic Oil

    Coarsely chop all the vegetables into bite-sized chinks, setting the tomatoes aside for now. Drizzle with the Roasted Garlic oil and stir to combine in a large shallow pan or roasting pan. Sprinkle with salt and pepper to taste and roast in a 400°F oven until the vegetables are soft and the mushrooms are "dry", approximately 1 hour, stirring periodically. Add cherry or grape tomatoes about 15 minutes prior to serving. Remove from oven and drizzle with the Garlic Balsamic Vinegar, tossing carefully. Toss over angel hair pasta (cooked as per directions on package) and serve with some freshly grated parmesan cheese.
